Although brownies are a worldwide classic today, their history is relatively short and curious. This delicious cake was born in the late 19th century in the United States, at a time when baking was starting to experiment with chocolate as the hottest ingredient.
There isn’t a single official “birth date”, but there are several interesting stories about how it came about:
The most widely accepted version says that in 1893, during the World’s Columbian Exposition in Chicago, Bertha Palmer asked for a dessert that was smaller than a slice of cake, easy to carry in a lunchbox, and perfect for events. The chefs at the Palmer House Hotel delivered a dense chocolate version that’s now considered the first brownie, just as we know it today.
Another popular theory tells the classic “kitchen miracle”: a baker forgot to add baking powder to a chocolate cake batter, resulting in a more compact, moist, extra-chocolatey cake—and the brownie was born.
And while the first printed mention of something called a “brownie” appears in 1896 in The Boston Cooking-School Cook Book, it originally didn’t include chocolate—that version was more like a molasses bar (“blondie”), the brownie’s fair-haired ancestor!
And the name? Where does “brownie” come from?
The name may simply come from its rich brown colour, but there’s also a theory: it could be inspired by the “brownies” of Scottish and English folklore—small household creatures that, according to tales, helped with chores in exchange for milk or sweets.
How did it become a global icon?
From the early 20th century, chocolate brownie recipes started gaining popularity in cookbooks and publications across the American Midwest, especially in communities like Chicago or Bangor, Maine, where different versions (“Bangor brownies”) began to appear.
Over time—and thanks to its simplicity—the brownie crossed borders: from home kitchens to cafés and bakeries all over the world. Today there are thousands of versions—fudgy (super dense), cakey (more like sponge cake), with nuts, with ice cream, with caramel… and of course the delicious handmade brownies from Mr.Brownie!
