From a chance invention to a global favorite, from the oven to the heart: the story with the flavor of Mr. Brownie.

Although brownies are now a global classic, their history is relatively short and curious. This delicious cake was created in the late 19th century in the United States, at a time when pastry chefs were beginning to experiment with chocolate as a top ingredient.  

There is no single official "date of birth," but there are several interesting stories about how it came about:

The most widely accepted version says that in 1893, during the World's Columbian Exposition in Chicago, Bertha Palmer requested a dessert that was smaller than a slice of cake, easy to transport in a lunchbox, and perfect for events. The chefs at the Palmer House Hotel responded with a dense chocolate version that is now considered the first brownie as we know it today.

Another popular theory tells the classic "kitchen miracle" story: a baker forgot to add baking powder to the chocolate cake batter, resulting in a denser, moister, and more chocolatey cake, and thus the brownie was born.

And although the first printed mention of something called a "brownie" appears in 1896 in The Boston Cooking-School Cook Book, it did not originally contain chocolate—that version was more like a molasses bar ("blondie"), the blond ancestor of the brownie!

And the name? Where does "brownie" come from?

The name may simply come from its rich brown color, but there is also a theory that it could be inspired by the "brownies" of Scottish and English folklore, small domestic creatures that, according to stories, helped with household chores in exchange for milk or sweets.

How did it become a global icon?

From the early 20th century onwards, chocolate brownie recipes became increasingly popular in cookbooks and publications in the American Midwest, especially in communities such as Chicago and Bangor, Maine, where different versions ("Bangor brownies") began to appear.

Over time, thanks to its simplicity, the brownie crossed borders: from home kitchens to cafés and bakeries around the world. Today there are thousands of versions—fudgy (very dense), cakey (more like a sponge cake), with nuts, with ice cream, with caramel... and of course, the delicious artisanal brownies from Mr.Brownie!
